Reviewed by Moira Adams This is a marvelous book, full of witty anecdotes and quotations, and beautifully illustrated. I can't think of a better gift for a vegetarian - or a more inspiring way to encourage anyone to take an interest in meat-free eating. The book is a treasure trove of off-beat and humorous stories about food, vegetarianism and the many famous people in history who chose to follow a veggie diet. Some of the anecdotes are factual, but the majority can better be described as whimsical - such as the unlikely story of how Marco Polo accidentally discovered pasta, or the supposed aphrodisiac qualities of certain spices. Along with the stories and quotations, Ms Atlas has provides an excellent selection of recipes, from sauces, soups and dressings, to quick breads and desserts. Many of these are of unusual ethnic origins. I was especially pleased to find a recipe for kuku sabzi, a dish which I have eaten at a Persian restaurant in my neighborhood but which I had never known how to make. I also enjoyed making the scallioned potato bake and the onion rye bread.
