It is full of healthy and delicious recipes, all carefully explained so that even the least experienced cook can make a success of them. The dishes vary from the simple to the sophisticated, but are for the most part easy to prepare. The book's emphasis is very much on the use of natural and healthy ingredients. Most of the dishes are low-fat or fat-free. All are vegetarian; many are vegan, or can be made vegan with some simple changes. Recipes apart, the book is a delight to read. The hand-lettered text - which can so easily look amateurish and cheap - enhances the presentation, as do the many charming illustrations. If I was forced to own just one vegetarian cookbook, this is the one I would opt for. Order
